Golden – amber color; subtle fruit aroma; crisp, medium – bodied palate; complex yet perfectly balanced. 7.5% alcohol.

Heat 3 gallons of filtered water to about 165°F (74°C). Add the Pilsner, Munich, and Caramunich malts to the hot water, stirring gently to prevent clumping. Maintain the temperature around 152°F (67°C) for 60 minutes.

Mashing the Grains

After mashing, sparge the grains with an additional 2 gallons of water heated to 170°F (77°C). Collect the wort in a brew kettle.

Sparging

Bring the wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes. Then add the Saaz hops in the last 15 minutes of the boil.

Boil the Wort

After boiling, cool the wort quickly to around 65°F (18°C) using a wort chiller or an ice bath. Transfer the cooled wort to the fermentation vessel and pitch the German Ale yeast. Seal the vessel and let it ferment for approximately 2 weeks at a temperature of 65-70°F (18-21°C).

Cooling and Fermentation

Once fermentation is complete, prepare bottles and caps. Siphon the beer into the bottles, leaving about 1 inch of headspace. Cap the bottles and allow them to carbonate at room temperature for another 1-2 weeks.
