In a large pot, heat 6 liters of filtered water to about 70°C (158°F).

Heat Water

Once the water reaches the desired temperature, remove it from heat and add the Pilsner and Carapils malts. Stir gently to avoid clumping.

Add Grains

Cover the pot and let the grains steep for 60 minutes, maintaining the temperature around 65-68°C (149-154°F).

Mashing Process

After mashing, sparge the grains with hot water (around 75°C or 167°F) to extract the sugars, collecting the wort in a fermenter.

Sparging

Bring to Boil

Add 1 oz of Hallertau hops at the beginning of the boil and allow to boil for 60 minutes.

Add Hops

Add 0.5 oz of Saaz hops in the last 10 minutes of the boil.

Add Finishing Hops

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 20°C (68°F).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the German lager yeast.

Pitch Yeast

Seal the fermenter with an airlock and ferment at around 10-12°C (50-54°F) for 2-3 weeks.

Fermentation

Dissolve 0.5 cups of corn sugar in 2 cups of boiling water and let it cool.

Prepare Priming Solution

Add the priming solution to the fermented beer, then bottle it in sanitized bottles and cap them.

Bottle Beer

Let the bottles sit at room temperature for about 1-2 weeks to carbonate.

Carbonation

Once carbonated, chill the bottles in the refrigerator and serve cold in a pilsner glass.
