Begin by heating 6 liters of filtered water to approximately 165°F (74°C).

Heat Water

Once the water has reached the desired temperature, slowly add the roasted barley malt, pale malt, and crystal malt to the water, stirring gently to avoid clumping.

Add Grains to Mash

Allow the mixture to rest for 60 minutes at a temperature of around 150°F (65°C). Stir occasionally.

Mash Rest

After the mash rest, sparge with an additional 170°F (77°C) water to collect about 7 liters of wort.

Sparging

Bring the wort to a boil in a brew kettle.

Boil Wort

Once boiling, add 1 oz of Czech Saaz hops and boil for 60 minutes.

Add Hops

In the last 5 minutes of the boil, add the remaining 0.5 oz of Czech Saaz hops for aroma.

Aroma Hops

After boiling, cool the wort quickly to about 65°F (18°C) using a wort chiller or an ice bath.

Cool Wort

Transfer the cooled wort to a sanitized fermentation vessel and pitch the lager yeast.

Pitch Yeast

Seal the fermentation vessel with an airlock and allow the beer to ferment at a cool temperature (around 50°F or 10°C) for 2-3 weeks.

Ferment

After fermentation is complete, dissolve 3 oz of priming sugar in a small amount of boiling water.

Prepare Bottling

Add the sugar solution to the bottom of the bottling bucket and then siphon the beer from the fermentation vessel into the bottling bucket, mixing gently.

Mix Sugar and Beer

Fill sanitized bottles with the beer and cap them securely.

Bottle Beer

Allow the bottles to condition at room temperature for another 1-2 weeks before chilling and enjoying your Lev Black Lion!
