It’s back for a limited time. This European style Pilsner is pale, light bodied, dry and very refreshing. Hop additions of Czech Saaz and New Zealand Nelson Sauvin provide distinctive grassiness and herbal spice, white wine character and gooseberry.

In a large kettle, heat 5 gallons of water to approximately 165°F (74°C). Add 5 cups of Pilsner Malt and 1 cup of CaraPils Malt to the water. Stir well to prevent clumping and ensure the grains are fully saturated. Maintain the temperature between 150°F and 155°F (65°C - 68°C) for 60 minutes.

Mashing

After mashing, drain the wort from the grains into a separate kettle. Rinse the grains with hot water to extract as much sugar as possible. Collect around 6-7 gallons of wort.

Lautering

Bring the wort to a boil. Once boiling, add 2 oz of Hallertau Hops. Boil for 60 minutes, adding 1 oz of Saaz Hops with 15 minutes remaining in the boil to enhance aroma.

Boiling

After boiling, cool the wort quickly to around 70°F (21°C) using a wort chiller or an ice bath.

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast by sprinkling it evenly over the surface of the wort. Seal the fermentation vessel with an airlock and store in a cool, dark place for 2 weeks.

Fermentation

After fermentation is complete, dissolve 3 oz of priming sugar in 2 cups of boiling water. Let it cool and then add it to the beer before bottling to carbonate. Bottle the beer and cap each bottle securely.

Bottling

Let the bottles sit at room temperature for 1-2 weeks to carbonate. After carbonation, store in a cool place until ready to drink.
