In a large pot, heat 6 liters of water to approximately 70°C (158°F).

Once the water reaches the desired temperature, add the Pale Malt, Carapils Malt, and Crystal Malt. Stir well to ensure all grains are wet.

Allow the mixture to mash for 60 minutes, maintaining the temperature around 65°C (149°F) for optimal enzyme activity.

After mashing, sparge with additional hot water to collect around 5 liters of wort in a separate pot.

Bring the wort to a boil and add the Hallertau hops. Boil for 60 minutes.

With 15 minutes remaining in the boil, add the Saaz hops.

After boiling, cool the wort quickly using an immersion chiller or an ice bath until it reaches about 20°C (68°F).

Once cooled, add 1 cup of honey to the wort and stir until fully dissolved.

Transfer the wort to a sanitized fermentation vessel and pitch the lager yeast.

Seal the fermentation vessel and allow it to ferment at a temperature of 10-12°C (50-54°F) for 2-3 weeks.

Sanitize your bottles and caps before bottling.

Once fermentation is complete, siphon the beer into the bottles, leaving about an inch of headspace at the top.

Cap the bottles securely and store them in a cool, dark place for at least 1-2 weeks for carbonation.
