Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any dirt and debris. Discard any mussels that are open and do not close when tapped.

Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallots, sautéing until softened and fragrant, about 3-4 minutes.

Add Wine and Mussels

Pour in the white wine and bring to a gentle simmer. Add the prepared mussels, stirring to coat them in the aromatics and wine.

Steam the Mussels

Cover the pot with a lid and let the mussels steam for about 5-7 minutes, or until they have all opened. Discard any mussels that remain closed.

Garnish and Serve

Remove the pot from heat. Stir in chopped fresh parsley, and season with salt and black pepper to taste. Serve immediately with crusty bread.
