Prepare the Fonio

In a medium saucepan, combine fonio with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 10 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add sliced radicchio and sauté for about 3-4 minutes until it begins to wilt. Then add the diced watermelon radishes and sauté for another 2-3 minutes.

Add Coconut Milk and Shiro

Pour in the coconut milk and stir in the shiro spice blend. Cook for an additional 5 minutes, allowing the mixture to simmer and thicken slightly.

Combine Ingredients

Add the cooked fonio to the skillet and mix well to combine all ingredients. Season with salt and black pepper to taste.

Serve

Plate the Mushroom Criollo mixture and top with pickled fennel. Serve warm.
