Prepare the Grits

In a saucepan, bring 4 cups of water to a boil. Stir in the grits and salt. Reduce heat to low, cover, and cook for about 20-25 minutes, stirring occasionally until the grits are thick and creamy.

Add Butter and Cilantro

Once the grits are cooked, stir in 2 tablespoons of butter and the chopped cilantro. Mix well and keep warm.

Cook the Fish

Season the dayboat fish fillets with the Creole seasoning. In a skillet, heat olive oil over medium-high heat. Cook the fish for about 3-4 minutes on each side or until cooked through and flaky.

Serve

To serve, spoon a generous portion of grits onto a plate, top with the cooked fish, and garnish with pickled onions and a squeeze of lemon juice.
