Prepare the Blackeye Peas

If using dried blackeye peas, soak them overnight and then boil until tender. If using canned, drain and rinse them.

Blend the Hummus

In a food processor, combine the blackeye peas, tahini, garlic, lemon juice, olive oil, cumin, and salt. Blend until smooth. If too thick, add water a tablespoon at a time until desired consistency is reached.

Prepare Burnt Onions

Slice the onion and sauté in a pan over medium heat with a little olive oil until they are deep brown and caramelized.

Assemble the Hummus

Transfer the hummus to a serving bowl. Top with burnt onions, a sprinkle of za'atar, and a drizzle of olive oil.

Prepare Cucumber and Chapati

Slice the cucumber into sticks or rounds and warm the chapati in a skillet or microwave.

Serve the blackeye pea hummus with cucumber slices and chapati on the side.
