Method

Prepare the Berbere Strip Steak

Season the Steak

Rub the strip steak with olive oil, berbere spice blend, salt, and black pepper. Let it marinate for at least 30 minutes.

Cook the Steak

Preheat a grill or skillet over medium-high heat. Cook the steak for 4-5 minutes on each side for medium-rare or until desired doneness. Let it rest before slicing.

Make the Red Pepper Coulis

Roast the Peppers

Roast the red bell peppers and garlic in the oven until charred. Allow to cool, then peel the skins off.

Blend the Coulis

Blend the roasted peppers and garlic with olive oil, salt, and black pepper until smooth.

Prepare the Baked Cilantro and Lime Rice

Cook the Rice

In a pot, bring vegetable broth to a boil. Add the rice, cover, and reduce heat. Cook for 15-20 minutes until the rice is tender.

Mix in Cilantro and Lime

Fluff the rice with a fork and mix in chopped cilantro, lime juice, and olive oil. Bake in a 350°F oven for 10 minutes.

Make the Raisin Escovitch

Combine Ingredients

In a bowl, mix together raisins, carrots, red onion, apple cider vinegar, salt, and black pepper. Let it sit for at least 30 minutes before serving.

Prepare the Chimichurri

Mix the Chimichurri

In a bowl, combine chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, salt, and black pepper. Stir well and let sit for at least 15 minutes before serving.
