    Combine liquids

    In a cocktail shaker or large mixing glass, pour 1.5 cups coconut water and 0.5 cups light coconut milk. Coconut water provides light coconut flavor and hydration while the light coconut milk adds creaminess without making the mocktail heavy.

    Emulsify

    Add 0.75 cups pineapple juice to the shaker. Secure lid and shake vigorously for 10–15 seconds (or stir briskly for 20–30 seconds) to combine the coconut milk and juices into a uniform, slightly frothy base.

Sweetener & Citrus

    Add 1 tablespoon simple syrup and 1 oz fresh lime juice to the shaker with the base. Taste and adjust: if you prefer sweeter, add another 1/2 tablespoon simple syrup; for brighter citrus, add up to 1/2 oz more lime juice.

Aromatics & Bitterness

    If using, add 2 dashes of Angostura bitters (or a non-alcoholic aromatic bitters alternative) to the shaker. This is optional but gives the mocktail a hint of complexity and a mild bitter counterpoint to the sweetness.

Ice & Serve

    Fill a highball or Collins glass with 1 cup crushed ice (or packed ice if crushed not available).

    Strain the shaken mixture over the prepared glass of ice. For a frothier top, shake with ice and double-strain; for a lighter drink, strain without shaking with ice in the shaker.

    Garnish with 1 tablespoon toasted coconut flakes sprinkled on top, and add a lime wheel and optional pineapple wedge on the rim.

    Serve immediately with a straw. Stir once before drinking to incorporate any coconut cream that may have separated.
