Mixed Salad Greens & Bases

Wash and Dry Greens

Rinse mixed baby lettuce, spinach, arugula, romaine, and shredded cabbage in cold water. Use a salad spinner to dry thoroughly or pat dry with clean towels. Excess moisture will make salads soggy—ensure greens are well-dried before arranging.

Tear any large leaves into bite-sized pieces. Combine greens in large chilled serving bowls or shallow hotel pans to allow guests to mix components easily.

Vegetable Toppings (ready-to-serve)

Prepare each vegetable on a separate tray or bowl for the salad bar. Halve cherry tomatoes, peel and slice cucumbers, shred carrots, thinly ring the red onion, slice roasted red peppers, trim and blanch sugar snap peas in boiling water for 1 minute then shock in ice water, and slice radishes.

Season corn kernels lightly with salt and a teaspoon of olive oil. Drain marinated artichokes well before placing in serving dish. Keep cold items chilled over ice or in refrigerated inserts.

Proteins & Grains

Roast chicken breasts: preheat oven to 200°C (400°F). Season 4 boneless skinless chicken breasts with salt and pepper, drizzle with 1 tbs olive oil, roast 20–25 minutes until 74°C (165°F) internal temperature. Cool, then slice thinly and refrigerate until serving.

Cook grains and beans ahead: prepare long-grain rice and quinoa according to package instructions; cool to room temperature and fluff. Rinse canned chickpeas and drain cooked black beans. Quarter hard-boiled eggs and arrange on a chilled platter.

Arrange cured meats (salami, prosciutto) on a platter, folded for easy picking. Keep all protein items refrigerated until service and replenish as needed.

Cheeses & Dairy

Cut and arrange cheeses: cube cheddar, slice fresh mozzarella, crumble feta, and shave Parmesan. Place cheeses in separate bowls with small serving utensils. Keep chilled and replace when temperatures rise.

Crunchy Toppings & Garnishes

Toast nuts and seeds: in a dry skillet over medium heat, toast sliced almonds and pumpkin seeds, stirring frequently, until fragrant and lightly browned (2–4 minutes). Cool completely before placing in serving bowls to preserve crunch.

Place croutons, dried cranberries and sunflower seeds in separate containers. Label any common allergens such as nuts and gluten.

Dressings & Condiments

Classic Vinaigrette

Whisk together 1 cup extra-virgin olive oil, 1/2 cup red wine vinegar, 2 tbs Dijon mustard, 2 tbs honey, 1 minced garlic clove, and salt and pepper to taste until emulsified. Store chilled in a sealed container and shake before serving.

Creamy Ranch

Combine 1/2 cup mayonnaise, 1/2 cup sour cream, 1/4 cup buttermilk, and 1/4 cup chopped fresh herbs. Season with salt, pepper, and a squeeze of lemon. Chill for at least 30 minutes to let flavors meld.

Place dressings in labeled dispensers or bowls with ladles. Provide olive oil and balsamic glaze for simple dressings and lemon wedges for guests who prefer a fresh squeeze.

Simple Vegetable Soup

In a large pot, heat 2 tbs olive oil over medium heat. Add diced onion, carrot, and celery; sauté 5–7 minutes until softened. Add diced potato and mixed vegetables, cook 3 minutes more. Pour in 8 cups vegetable broth and 2 cups canned diced tomatoes. Bring to a simmer, cover, and cook 20–25 minutes until vegetables are tender. Season with salt and pepper to taste. Keep soup hot in a soup kettle for service.
