Barrel Preparation & Aging

Sanitize and season barrel

Rinse a new or clean small charred oak barrel with hot water to remove loose char. Fill the barrel with hot water and let it sit for 12–24 hours, then drain and rinse. This checks for leaks and seasons the wood.

Fill barrel for aging

Combine 750 ml rye whiskey and 225 ml sweet vermouth in a clean measuring container (this creates a 2.5:0.75 oz ratio scaled for the barrel). Add 9–12 dashes of Angostura bitters for the full batch (scale proportionally). Pour the blend into the sanitized barrel, seal, and store at room temperature out of direct sunlight.

Age and taste

Age the mixture in the small barrel for 1–4 weeks, tasting every 2–3 days after the first week. Barrel contact will add oak, caramel and vanilla notes; remove when the oak influence and sweetness are balanced to your taste. Typical range: 5–21 days depending on barrel char and size. When satisfied, transfer the aged spirit to a clean bottle and store sealed.

Build & Serve (single cocktail)

Chill the glass: place a rocks glass in the freezer for a few minutes or fill with ice water while you prepare the cocktail.

Measure 2.5 oz of the barrel-aged Manhattan blend (rye/vermoth/bitters) into a mixing glass or small pitcher. If you used a larger batch, stir the blended, bottled aged spirit and pour.

Add ice to a mixing glass, then pour the 2.5 oz aged Manhattan mixture over the ice. Stir gently for 20–30 seconds until well chilled (and slightly diluted).

Discard ice/water from the chilled rocks glass. Place one large clear ice cube in the glass.

Strain the stirred cocktail over the large ice cube in the rocks glass using a julep or hawthorne strainer to remove small ice shards.

Garnish with one Luxardo/maraschino cherry placed on top of the ice or speared with a cocktail pick. Serve immediately.

Adjustments & Notes

If the aged blend tastes too oak-forward or dry, add up to 1 oz un-aged rye to the bottle and taste again; if too sweet, add a small amount of straight rye and re-bottle. Record aging time and barrel details for repeatability.
