Macerated Berry-Pomegranate Base

Method

Macerated Berry-Pomegranate Base

1

Combine and macerate

In a medium bowl, add the mixed wild berries and 1/2 cup pomegranate arils. Sprinkle 2 tablespoons granulated sugar and 2 tablespoons fresh lime juice over the fruit. Add 1 teaspoon pomegranate molasses if using. Gently toss to coat so berries release their juices.

2

Let the mixture sit at room temperature for 15–20 minutes, stirring once or twice. This maceration softens berries and creates a jammy, tangy base that will flavor the margarita.

3

After maceration, press the fruit through a fine-mesh sieve using the back of a spoon to extract as much liquid and pulp as possible into a bowl. Reserve the strained solids for garnish if desired. You should end up with roughly 3–4 tablespoons of berry-pomegranate puree/juice.

Cocktail Mix

4

Prepare a cocktail shaker. Add the macerated berry-pomegranate puree (all extracted juice/pulp) to the shaker.

5

Pour in 4 oz silver tequila, 1.5 oz Cointreau or triple sec, 3 oz pomegranate juice, 0.5 oz simple syrup, and 0.5 oz fresh lime juice into the shaker with the puree.

6

Fill the shaker with ice (about 1 to 1.5 cups) until roughly 3/4 full. Secure the lid and shake vigorously for 12–18 seconds until the shaker is cold and the mixture is well combined and slightly frothy from the fruit.

7

Place a fine mesh strainer over a serving vessel (or double-strain for a smoother drink). Strain the cocktail into the shaker's strainer and then into prepared serving glasses (see Glass Prep). If you prefer more texture, use a single strain so tiny seeds/pulp remain.

Garnish & Glass Prep

8

Prepare the glass rims: rub a lime wedge around the rim of two rocks or margarita glasses. Dip the rims into coarse salt or superfine sugar (your preference). Shake off excess.

9

Fill the glasses with fresh ice. Pour the strained Wild Berry Pomegranate Margarita into each glass, dividing evenly (recipe yields two generous cocktails).

10

Garnish each glass with a few reserved pomegranate arils, a berry or two, and a mint sprig. Optionally drop a few arils into the drink for visual appeal.

11

Serve immediately with a lime wedge on the side.
