Method

Prep

1

Chill a rocks or coupe glass in the freezer or fill with ice water to cool while you prepare the cocktail.

2

Place the fine sea salt on a small plate. Rub a lime wedge around the rim of the chilled glass to moisten it, then dip the rim into the salt to coat. Set the glass aside.

Mixing

3

Combine ingredients

In a cocktail shaker, add the tequila, blue curaçao, fresh lime juice, agave nectar, and 2 dashes of orange bitters.

4

Add ice and shake

Fill the shaker with crushed or cubed ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the shaker is very cold and the exterior is frosted.

5

Strain

Discard the ice or water from the chilled glass. Double-strain the shaken cocktail into the prepared glass over fresh crushed ice (or a large ice cube if preferred). The blue curaçao will tint the drink a bright blue while the agave balances the lime.

Garnish & Finish

6

Float a lime wheel on the surface of the cocktail. If using, express the oils from the flamed orange peel over the drink by warming the peel with a lighter or match near the surface and gently squeezing so a light spray of orange oil passes over the cocktail, then discard or drop peel into the glass.

7

Serve immediately with a short stirring straw. Recommend tasting and adjusting: add a touch more agave (0.25 oz) if you prefer sweeter, or a small squeeze more lime if you want brighter acidity.
