Make the Dough
In a large bowl, combine the flour and salt. Create a well in the center and crack the eggs into it. Add the olive oil. Using a fork, beat the eggs gently and gradually incorporate the flour until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Roll and Cut the Pasta
After resting, divide the dough into four pieces. Roll out each piece using a pasta machine or a rolling pin to your desired thickness. Cut into your preferred pasta shape (fettuccine, tagliatelle, etc.).
Cooking the Pasta

Boil the Pasta
Bring a large pot of salted water to a rolling boil. Add the fresh pasta and cook for 2-4 minutes until al dente. Fresh pasta cooks much faster than dried pasta.

Drain and Serve
Drain the pasta and reserve a cup of the pasta water. Toss the pasta with olive oil, fresh basil, and grated Parmesan cheese. Adjust consistency with reserved pasta water if needed. Season with salt and pepper to taste.
