Make dough
In a large mixing bowl whisk together flour, instant yeast, sugar, and salt. Make a well in the center and add warm water, milk, and 3 tbsp neutral oil. Stir with a wooden spoon until a shaggy dough forms.

Turn dough onto a lightly floured surface and knead 6–8 minutes until smooth and slightly elastic. If dough is sticky, sprinkle small amounts of flour; it should be soft and slightly tacky.

Punch down the dough and divide into 4 equal pieces for large puffy wraps (serves 4). Let pieces rest, covered, for 10 minutes before shaping.

Protein Preparation

Choose your protein: chicken, beef, or tofu. Pat the protein dry with paper towels. If using chicken, slice thin; if ground beef, break into chunks; if tofu, press and slice into 1/4" slabs.

In a medium bowl combine olive oil, soy sauce, smoked paprika, ground cumin, garlic powder, onion powder, black pepper, salt, and hot sauce (if using). Mix to make the marinade/seasoning.

Heat a large skillet over medium-high heat. Add 1 tbsp oil if cooking chicken or beef; for tofu add 1 tbsp oil as well. For chicken, cook 4–6 minutes per side until cooked through and browned, then slice into bite-sized pieces. For ground beef, cook, breaking up, 6–8 minutes until browned and cooked. For tofu, sear 3–4 minutes per side until golden. Remove from heat and keep warm.

Heat vegetable oil in a wide skillet or shallow fryer to medium-high (about 350°F / 175°C). You want enough oil to sizzle along the surface but not completely deep-fry—about 1/3"–1/2" depth.

Working one at a time, place a rolled wrap dough circle oil-side down in the hot skillet. Cook 45–60 seconds until golden brown and puffed in places, then flip and cook the other side 45–60 seconds. The exterior should be crisp and puffed, interior soft. Transfer to a wire rack or paper towel-lined plate. Repeat with remaining wraps, adding more oil to the pan if needed.

Let wraps rest 1–2 minutes so they remain pliable but crisp on the outside.

To build each Puffy Wrap: spread 1–2 tbsp garlic-yogurt sauce on the interior of the wrap, layer 1/4 of the cooked protein, 1/2 cup shredded lettuce, tomato slices, 1/4 cup shredded cheese, and any optional pickles or jalapeños. Drizzle with 1 tbsp spicy mayo. Fold bottom up and sides loosely to form a handheld wrap.
Sauces & Finishing

If making garlic-yogurt sauce: whisk 1/2 cup plain yogurt with 1 clove minced garlic, 1 tsp lemon juice, pinch of salt, and 1 tbsp chopped fresh parsley or dill. Adjust salt to taste.

If making spicy mayo: mix 1/4 cup mayonnaise with 1–2 tsp hot sauce to taste and 1/2 tsp lemon juice. Stir until smooth.

Serve the Puffy Wrap immediately with your choice of two sides (fries, coleslaw, or salad) and a drink. Puffiness is best when served warm the same day.
