Method

    If you don't have cooked rice, cook 1/2 cup dry long-grain brown rice according to package directions to yield ~1 cup cooked (about 35–40 minutes). Fluff and keep warm. Place 1 cup cooked brown rice in the bowl and top with 1 cup packed chopped baby spinach so the spinach wilts slightly from the warm rice.

Protein (chicken)

    Prep

    Pat the 6 oz chicken breast dry and trim any fat. If thick, butterfly or pound to even thickness ~3/4 inch so it cooks evenly.

    Season

    In a small bowl mix 1 tbs olive oil, 1 tsp cumin, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp kosher salt and 1/4 tsp black pepper. Rub the mixture evenly over both sides of the chicken.

    Cook

    Heat a nonstick or cast-iron skillet over medium-high heat. Once hot, add the chicken and cook 4–5 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C) and the exterior is nicely browned. Let rest 3–4 minutes, then slice thinly against the grain.

Fresh Toppings

    While the chicken rests, prepare toppings: halve cherry tomatoes, dice the cucumber, thinly slice scallions, chop cilantro, shred red cabbage, and slice 1/2 an avocado. Arrange these attractively on top of the rice and spinach base in separate sections so flavors stay distinct.

Sauce & Dressing

    Whisk together 3 tbs plain Greek yogurt, 1 tsp fresh lime juice, 1/2 tsp honey, 1/2 tsp sriracha (optional), 1 tsp olive oil, 1/8 tsp salt and a pinch (1/16 tsp) black pepper until smooth. Taste and adjust for sweetness, acidity or heat. Spoon 2–3 tbs of dressing over the bowl, and serve extra on the side.

Sides & Finish

    Top the bowl with sliced chicken. Sprinkle 1 tbsp toasted pumpkin seeds and 2 tbsp quick-pickled red onion over the bowl. Add 1/2 avocado slices. Finish with chopped cilantro and a lemon wedge on the side. Offer two simple sides (examples): a small side of roasted sweet potato cubes (not included in this single-bowl ingredient list) and a small cup of fresh fruit, plus a cold beverage.

To Serve

    Serve immediately while chicken is warm. Squeeze lemon over the bowl if desired and mix lightly so dressing coats the ingredients. Enjoy.
