Prepare protein
If you don’t have precooked chicken, grill or pan-sear 2 medium chicken breasts (about 10–12 oz total) seasoned with a pinch of salt and pepper until internal temperature reaches 165°F (74°C). Let rest 5 minutes, then shred or dice into bite-sized pieces to yield about 2 cups.

Combine filling
In a medium bowl, combine shredded chicken, crumbled bacon, 1 cup shredded cheddar, 1 cup shredded monterey jack, 1/2 cup diced red bell pepper, 2 tbsp sliced green onions, 2 tbsp chopped cilantro, 1 tsp lime juice, 1/2 tsp salt, and 1/4 tsp black pepper. Toss gently until evenly mixed.

Lay out 4 large flour tortillas. In a small bowl, mix 1/2 tsp chili powder and 1/2 tsp garlic powder. Lightly sprinkle about 1/4 tsp of the seasoning mix onto the inside of each tortilla (or evenly across the prepared filling later) to add a subtle smoky-garlic note.

Assemble quesadillas
Heat a large nonstick or cast-iron skillet over medium heat. Spread 1/2 tablespoon butter and a few drops of oil in the pan (about 1 tsp bacon fat can substitute). Place one tortilla in the skillet. On half of the tortilla, evenly spread about 1 cup of the filling mixture (adjust to fit), leaving a 1/2-inch border. Fold the empty half over the filling to create a half-moon quesadilla. Repeat for remaining tortillas but cook one at a time for best browning.

Cook until golden and melty
Cook each assembled quesadilla 2–3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and cheese is melted. If the tortilla browns too quickly before the cheese melts, lower heat to medium-low and cover the skillet for 1–2 minutes to trap heat.

Finish and rest
Transfer cooked quesadilla to a cutting board and let rest 1 minute, then slice into 3 or 4 wedges. Repeat assembly and cooking for remaining tortillas, adding more butter/oil to the skillet as needed.
Serving

Serve hot with sour cream, salsa, and sliced avocado or a scoop of guacamole. Garnish with extra chopped cilantro and green onions if desired.
