Papri and fry

    Make dough

    In a bowl combine 1 cup all-purpose flour, 1/4 cup semolina, 2 tbs softened butter (or ghee) and 1/4 tsp salt. Rub the butter into the dry ingredients until mixture resembles coarse crumbs. Gradually add about 3 tablespoons cold water and knead quickly to a firm, smooth dough. Do not over-hydrate — dough should be stiff. Wrap and rest 15 minutes.

    Roll and cut papris

    Divide dough into two portions. On a lightly floured surface roll each portion very thin (about 1–1.5 mm). Using a small round cutter (about 1.5–2 inches / 4–5 cm) or a sharp knife, cut into circles or diamonds. Gather scraps and re-roll once, keeping dough thin to ensure crispness.

    Fry papris

    Heat 1.5–2 cups vegetable oil in a deep pan to medium-high (about 350°F / 175°C). Test with a small scrap — it should sizzle and puff. Fry papris in small batches so they have room to crisp; flip once, fry until golden and crisp (about 30–60 seconds per side). Remove with a slotted spoon to paper towels; drain and cool. If you prefer, bake for a lighter version: spray on oil and bake at 400°F / 200°C for 8–10 minutes, flipping halfway, until crisp.

Chickpeas and toppings

    If using canned chickpeas, drain and rinse well. Warm chickpeas in a small saucepan with a pinch of salt and 1/4 tsp roasted cumin powder for 3–4 minutes; drain if excess liquid. Combine chickpeas with finely chopped 1/2 cup red onion, optional 1/4 cup tomato, 1 finely chopped green chili (optional) and 1/4 cup chopped cilantro in a bowl. Add 1 tablespoon lemon juice and gently toss. Taste and adjust salt.

Yogurt and sauces

    Whisk 1 cup plain yogurt until smooth. Add 1 teaspoon sugar and 1/4 teaspoon salt to balance the tartness; taste and adjust. Keep chilled. Warm the tamarind chutney slightly if very thick so it is pourable. If you need to make quick chutneys: mix tamarind paste with water and jaggery or brown sugar to taste; for green chutney blend cilantro, mint, green chili, lemon juice, salt and a little water until smooth.

Assembly and finishing

    To assemble papri chaat for 4 servings: on a large platter or individual plates arrange a single layer of papris (about 20–24 papris total). Spoon a small amount of the chickpea-onion mixture over each papri (or mound in the center of the platter). Drizzle each portion with whisked yogurt (about 2–3 tbs per serving), tamarind chutney (about 1–2 tbs per serving) and green chutney to taste.

    Sprinkle evenly with 1/2 cup sev (or crushed crunchy snack), remaining 1/4 cup chopped cilantro, 1/2 tsp roasted cumin powder, 1/2 tsp chaat masala, 1/4 tsp red chili powder and 1/4 tsp black salt. Finish with a light squeeze of lemon juice for brightness.

    Serve immediately so papris remain crisp. Provide extra chutneys and sev at the table. Leftover components (yogurt, chickpeas, chutneys) can be refrigerated separately for up to 2 days but assembled chaat will soften quickly.
