Samosas & Potatoes

    Cook potatoes

    Place diced potatoes in a medium saucepan and cover with cold water by 1 inch. Add 1/2 teaspoon salt. Bring to a boil, then simmer until potatoes are fork-tender, about 8–10 minutes. Drain thoroughly and transfer to a bowl; let steam off for 2 minutes.

    Season potatoes

    While still warm, lightly mash the potatoes so they hold shape but break easily (use a fork). Add 2 tablespoons vegetable oil, 1/4 tsp black pepper, 1/2 tsp roasted cumin powder, 1/4 tsp red chili powder (adjust to taste), 1/2 tsp amchur or 1/2 tsp lemon juice, and the optional 1/2 tsp fresh lemon juice. Mix gently to combine. Taste and adjust salt.

    Prepare samosas

    If using refrigerated or frozen samosas, reheat according to package instructions until crisp (typically bake at 375°F / 190°C for 12–18 minutes or deep-fry/air-fry until golden). If using fresh hot samosas, keep warm. Cut each samosa into halves or quarters (depending on size) and place on a large serving platter as the base for the chaat.

Chutneys & Sauces

    If tamarind chutney is store-bought and very thick, thin to a pourable consistency with 1–2 tablespoons water and stir in 1 tsp sugar if it needs sweetness. Taste and adjust. Whisk the plain yogurt until smooth; if too runny, fold in a tablespoon of drained yogurt to thicken slightly.

    Spoon 2–3 tablespoons tamarind chutney and 1–2 tablespoons green chutney over each samosa piece. Drizzle about 2–3 tablespoons of whisked yogurt across the platter in a lattice or zigzag pattern. The goal is alternating sweet, spicy and creamy layers.

Fresh & Crunchy Toppings

    Scatter the lightly mashed seasoned potatoes over the samosa pieces so each piece gets some potato. Sprinkle diced red onion and tomato evenly across the platter.

    Add the crunchy element next: sprinkle thin sev or crushed papdi (about 1/2 cup) over the top so there is a crisp contrast on every bite. If using pomegranate seeds, scatter them now for brightness and color.

    Finish with chopped cilantro and additional small drizzles of tamarind and green chutney as desired for visual appeal and balanced flavor.

Spices & Finishing

    Lightly dust the entire dish with the remaining 1/2 teaspoon roasted cumin powder, 1/2 teaspoon chat masala, and a pinch more red chili powder if you like heat. Taste and adjust salt or chutneys.

    Serve immediately so the sev stays crisp. Provide extra chutneys and yogurt on the side for guests to add more. Leftovers can be refrigerated for up to 24 hours but the crisp components will soften.
