Chickpea Curry

    Prepare and Cook Chickpeas

    Drain the soaked chickpeas and rinse. Place them in a large pot with 1.5 liters of fresh water (or enough to cover by 2–3 inches). Bring to a boil, reduce to a simmer and cook until tender, 60–90 minutes depending on age of beans. Alternatively pressure-cook for 20–30 minutes until tender. Reserve 2 cups of the cooking liquid, then drain the chickpeas and set aside.

    Sauté Aromatics

    Heat 3 tbs vegetable oil and 1 tbs ghee (or extra oil) in a wide heavy-bottomed pan over medium heat. Add 1 tsp cumin seeds and fry until fragrant, ~30 seconds. Add 1 cup finely chopped onion and sauté until golden brown, 8–10 minutes, stirring occasionally to avoid burning.

    Add 1 tsp grated ginger, 3 cloves minced garlic and 2 slit green chilies; sauté 1–2 minutes until raw smell dissipates.

    Spice the Base

    Lower heat slightly and add 1 tsp ground coriander, 1 tsp ground cumin, 0.5 tsp turmeric, 0.5 tsp red chili powder and 0.75 tsp garam masala. Stir continuously for 30–45 seconds to bloom the spices without burning.

    Tomato and Simmer

    Stir in 2 tbs tomato paste and 1 cup crushed or pureed tomatoes. Cook 4–6 minutes until oil starts to separate at the edges and the raw tomato smell is gone.

    Combine Chickpeas and Liquid

    Add the cooked chickpeas, 2 cups reserved chickpea cooking liquid (or water), and 1.5 tsp salt. Bring to a gentle boil, then reduce heat and simmer uncovered for 20–25 minutes, stirring occasionally, until the curry thickens to a luscious, slightly saucy consistency. If it becomes too thick, add more cooking liquid or water 1/4 cup at a time.

    Finish

    Adjust seasoning to taste. Stir in 1 tbsp lemon juice and 1/4 cup chopped fresh cilantro. Simmer 1 minute, then remove from heat and keep warm.

Black Pepper Onions (Topping)

    Prepare Onions

    Thinly slice 1 cup red onion and place in a bowl. Sprinkle 1/4 tsp salt and 0.5 tsp sugar; toss and let sit 5 minutes to soften and draw out moisture.

    Dress and Season

    Add 1 tsp vinegar and 1 tsp oil to the onions and toss. Lightly crush 1 tsp whole black peppercorns using a mortar and pestle or spice grinder to a coarse grind, then mix into the onions. Taste and adjust salt or vinegar if desired. Set aside to meld while the curry finishes; flavors will mellow and the peppery bite will infuse the onions.

    Optional Quick Sear (for warm topping)

    If you prefer warm onions, heat a small skillet over medium-high, add 1 tsp oil and sear the sliced onions for 1–2 minutes until edges start to brown, then remove and toss immediately with crushed black pepper, vinegar, sugar and salt.

Assembly and Serving

    Spoon the hot Lahori Cholay into a shallow serving bowl. Heap the black pepper onions on top or to one side so they remain crisp.

    Garnish with extra cilantro leaves, a few thin strips of julienned ginger and a dollop of plain yogurt or raita if using. Serve immediately with warm naan or steamed rice.
