Rinse and soak
Rinse 1 cup of dal under cold water until the water runs clear. Optional: soak for 15–30 minutes to shorten cooking time and produce a creamier texture.

Cook dal
In a medium saucepan or pressure cooker, combine the rinsed dal, 3 cups water, 1 tsp turmeric, 1 tsp salt and 1 tbs ghee or oil. Bring to a boil, then reduce heat to low and simmer, covered, stirring occasionally, until dal is very soft and begins to break down (about 25–30 minutes on the stove). If using a pressure cooker, cook for 2–3 whistles and then let pressure release naturally. Skim any foam from the surface as it cooks.

Mash and adjust
Once cooked, use a spoon or whisk to mash the dal to your preferred consistency. Add up to 1/2 cup additional water to reach a soupier curry consistency. Taste and adjust salt.

Fry garlic and ginger
Add the thinly sliced garlic (4 cloves) and sauté until just golden (about 30–60 seconds). Add the chopped ginger (1 tbs) and the slit green chili and sauté another 30 seconds.

Spice bloom
Stir in 1/2 tsp red chili powder, 1/2 tsp ground coriander and 1/4 tsp garam masala. Cook 30 seconds to a minute to bloom the spices, being careful not to burn the garlic.

Combine with dal
Pour the hot tarka (tempering) directly into the pot of cooked dal. Stir thoroughly to incorporate the flavored oil and aromatics into the lentils. Simmer together 2–3 minutes so flavors meld.

Turn off heat. Stir in 1 tablespoon lemon juice and 2 tablespoons chopped cilantro. If desired, add 1 teaspoon butter or ghee on top for richness. Taste and adjust seasoning or acidity (more lemon or salt) as needed.

Serve hot with steamed rice, roti, or naan. Leftover dal will thicken on standing—add a splash of water and reheat gently, stirring to restore desired consistency.
