    Prepare chicken tikka marinade

    Cut the boneless chicken into bite-size strips or small pieces. In a bowl combine plain yogurt, ginger-garlic paste, garam masala, ground cumin, red chili powder, turmeric, lemon juice, 0.5 tsp salt and 1 tbsp vegetable oil. Mix into a smooth marinade.

    Marinate chicken

    Add the chicken pieces to the marinade, coat evenly, cover and refrigerate for at least 30 minutes (up to 4 hours) to allow flavors to penetrate.

    Cook chicken tikka

    Heat a non-stick skillet or grill pan over medium-high heat. Add a little oil. Cook marinated chicken in a single layer for 3–4 minutes per side until charred spots appear and internal temperature reaches 165°F (74°C). Remove and set aside to rest for 5 minutes, then roughly chop or shred into bite-sized pieces.

    Prepare eggs

    Slice or coarsely chop the 2 hard-boiled eggs. Season lightly with a pinch of salt and black pepper. Set aside for assembly.

Sandwich Assembly & Vegetables

    Prepare bread

    If you prefer toasted bread, spread softened butter on each bread slice. Heat a skillet over medium heat and toast bread slices until golden on both sides. Alternatively, toast in a toaster.

    Season vegetables

    Thinly slice tomato and cucumber. Lightly sprinkle tomato and cucumber slices with 1/4 tsp salt and a little black pepper; let sit 2 minutes to draw out moisture, then pat dry with paper towel.

    Assemble first layer (bottom to middle)

    Lay 2 slices of toasted bread as the base. Spread about 1/4 cup mayonnaise evenly over both slices. Arrange a layer of lettuce (if using), then place half of the cooked chicken tikka pieces evenly over the mayo.

    Assemble middle layer

    Place a second slice of bread over the first chicken layer to create the middle layer. Spread a thin layer of mayo on the top of that slice. Add the sliced hard-boiled eggs and a few tomato and cucumber slices over the eggs. Season lightly with salt and pepper.

    Assemble top layer

    Top with the final slice of bread. Press sandwich gently, then secure with toothpicks at 2–3 points to hold layers. Using a sharp knife, cut the three-layer sandwich diagonally or into quarters as preferred.

Fries & Condiment

    Prepare fries (if using fresh potatoes)

    If using fresh potatoes: peel (optional) and cut potatoes into even sticks. Soak in cold water for 20 minutes to remove starch, then drain and pat very dry with paper towels.

    Cook fries

    Heat oil in a deep pan to 350°F (175°C) or until a small piece of potato sizzles immediately. Fry potatoes in batches until golden brown and crisp, about 3–5 minutes per batch depending on thickness. Remove with a slotted spoon to paper towels to drain. Season immediately with 1/2 tsp salt.

    Serve

    Arrange the cut Adda’Wich on a plate with a generous portion of fries on the side and a serving of ketchup. Serve hot.
