    Prepare and parboil potatoes

    Wash the potatoes, leave the skin on for texture if desired. Cut each potato into 6–8 wedges depending on size so wedges are roughly uniform. Place wedges in a pot, add 1.5 liters water and 1 tablespoon salt. Bring to a boil, then simmer for 6–8 minutes until the potatoes are just fork-tender but still hold shape. Drain and spread on a tray to dry and cool for 5 minutes.

Pickling spice (Achari) blend

    Toast and grind spices

    In a small dry skillet over medium heat, add mustard seeds, fenugreek, fennel, nigella, cumin seeds and dry red chilies. Toast, shaking the pan, for 1–2 minutes until mustard seeds pop and spices become aromatic — do not burn. Let cool, then coarsely grind or crush the mix in a mortar and pestle or spice grinder to a slightly coarse powder. Set aside 1 heaping tablespoon of this blend for garnish/tempering and keep the rest for cooking.

Aromatics & base

    Heat 4 tablespoons oil in a wide skillet or heavy-bottomed pan over medium heat. If using mustard oil, heat until smoking point then let cool slightly; otherwise use vegetable oil warmed to medium. Add 1 teaspoon cumin seeds (and optional 1/2 teaspoon whole mustard seeds) and let them sizzle for 20–30 seconds.

    Add the thinly sliced onion and a pinch of salt, sauté 4–6 minutes until soft and beginning to color. Stir in grated ginger, minced garlic and slit green chili; cook 30–45 seconds until fragrant.

    Add chopped tomato and cook 3–4 minutes until broken down and oil starts to separate at the pan edges.

Spices & seasoning

    Lower heat to medium-low and add turmeric, red chili powder and coriander powder. Stir for 20–30 seconds to toast the powders lightly in the oil so they bloom.

    Add the coarsely ground achari spice blend (about 2 tablespoons) and stir to combine with the onion-tomato masala for 30–45 seconds until aromatic. If mixture seems dry, add 1–2 tablespoons water to help incorporate the spices.

    Taste and add 1 teaspoon salt (adjust to taste), 1/2 teaspoon sugar if using, and 1 teaspoon amchur powder (or 1 teaspoon lemon juice added at the end) for the tangy pickled flavor. Stir well.

Combine potatoes and finish

    Increase heat to medium-high and add the parboiled potato wedges in a single layer as much as possible. Gently toss to coat the wedges with the achari masala, being careful not to break them. Cook undisturbed 3–4 minutes to let a light crust form on the bottom.

    Turn the wedges and continue to cook, tossing occasionally, for another 6–8 minutes until potatoes are cooked through and edges are lightly browned and well coated in the spices. If the pan gets too dry, splash 1–2 tablespoons water.

    Taste and adjust salt, spice or tang. If you didn’t use amchur earlier, squeeze the juice of half a lemon now to brighten flavors.

Finishing & garnish

    Sprinkle the reserved tablespoon of coarsely ground achari spice and chopped cilantro over the potatoes. Give a gentle final toss to distribute.

    Transfer AcharI Aloo to a serving dish, garnish with lemon wedges and serve hot or warm as a side with flatbread, rice or as part of a platter.
