Preparing the Veal Chops

Marinate the Chops

In a small bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the veal chops and let marinate for at least 30 minutes.

Cook the Veal Chops

Heat a large skillet over medium-high heat. Add the veal chops and sear for about 4-5 minutes on each side, or until they reach your desired level of doneness. Remove from heat and let rest for 5 minutes.

Roasting the Vegetables

Preheat the oven to 400°F (200°C). On a baking sheet, toss asparagus and cherry tomatoes with olive oil, salt, and black pepper. Roast for about 15-20 minutes, or until tender and slightly charred.
