Prep the glass

Rim the glass

Rub the lime wedge around the outer rim of a highball or Collins glass. Pour Tajin onto a small plate, then dip the rim into the Tajin to coat lightly. Set the glass aside.

Mix the cocktail

Fill a cocktail shaker with a handful of ice (about 4–6 large cubes). Add 2 oz Lalo Blanco tequila, 1 oz fresh lime juice, 0.5 oz Gran Gala, and 0.25 oz agave syrup to the shaker.

Secure the shaker lid and shake vigorously for 10–12 seconds until the outside of the shaker is well chilled and slightly frosted. This chills and dilutes the mixture properly.

Fill the prepared Tajin-rimmed glass with fresh ice (large cubes or crushed, about 1 cup). Strain the shaken tequila mixture into the glass over the ice.

Top the drink with 4 oz chilled Topo Chico. Gently stir once or twice with a bar spoon to integrate the sparkling water without flattening it.

Finish & serve

Garnish with the used lime wedge on the rim or a thin wheel of lime. Optionally, sprinkle a light pinch of Tajin over the top for an extra hit of spice and citrus aroma.
