Method

Cocktail

1

Build and stir

Add 2 oz Lunazul Reposado tequila, 0.5 oz agave syrup, 3 dashes mole bitters and 1 dash aromatic bitters (if using) into a mixing glass or a small jug.

2

Fill the mixing glass with plenty of ice and stir briskly but smoothly for 20–30 seconds (about 15–25 full stir revolutions) until the mixture is well chilled, slightly diluted, and the outside of the glass is frosty.

3

Place a large clear ice cube (or several large ice cubes) into an old fashioned glass.

4

Strain the chilled cocktail over the large ice cube into the prepared glass.

Garnish & finish

5

Expressed orange oils

Take an orange peel and hold it with the outer (zest) side facing the drink about 2–3 inches above the surface. Pinch the peel to express the oils across the cocktail, moving across the surface so oils spread evenly. Rub the rim of the glass with the peel to transfer additional citrus aroma.

6

Optional flamed twist

If you want a smoky citrus note, hold the peel between a lighter/flame and the surface of the drink and quickly flame it once while pinching to express oils. Be careful and quick; this step is optional.

7

Drop the used peel into the drink or rest it on the rim as a garnish. Serve immediately.
