Rim preparation

Place the pink finishing salt on a small plate. Moisten the outer rim of a highball or Collins glass with a lime wedge, then gently dip the rim into the salt to create a thin, even salted edge. Set the glass aside.

Shake base

Add the Sauza Blanco tequila (2 oz), fresh lime juice (0.75 oz) and agave syrup (0.25 oz, optional for a touch of sweetness) into a cocktail shaker filled halfway with ice (about 1 cup). Secure the lid and shake vigorously for 10–12 seconds until well chilled and slightly frothy.

Build the drink

Fill the prepared glass with fresh ice. Strain the shaken tequila-lime mixture into the glass over the ice.

Top with sparkling

Slowly top the drink with 3 oz Fever-Tree Sparkling Grapefruit (or your chosen sparkling mixer) to preserve effervescence. Gently stir once with a bar spoon to combine flavors without flattening the bubbles.

Garnish and finish

Slide a lime wheel or wedge onto the rim or float it in the drink. Serve immediately with a straw or stir stick so the drinker can adjust salt or sweetness. Note: omit agave to make it even 'skinnier' — the pink salt provides a bright savory contrast.
