Prepare glass

Place the highball glass in the freezer for a few minutes or fill briefly with ice and water to chill, then discard the water if used.

Muddle mint and agave

In a mixing glass or directly in the chilled highball, combine the fresh mint leaves (reserve 1 small sprig for garnish) and the agave syrup. Gently muddle 8–10 mint leaves with the agave 6–8 times — press firmly enough to release the oils but avoid shredding the leaves (which causes bitterness).

Add lime and rum

Add the fresh lime juice and white rum to the muddled mint and agave. Give the mixture one quick gentle stir to combine and dissolve any remaining agave.

Assemble drink

Fill the chilled highball glass three-quarters full with crushed ice. Strain the rum-mint-lime mixture over the ice (or pour directly if assembled in the serving glass).

Top with soda and finish

Top the drink with about 2 oz club soda (adjust to taste). Stir gently with a bar spoon 4–6 times to lift the mint aroma through the drink without over-diluting.

Garnish and serve

Garnish with the reserved mint sprig (clap it between your hands once to release oils) and a lime wheel or wedge on the rim. Serve with a straw and enjoy.
