Fit Turkey Wrap

In a large mash tun, heat 5 gallons of water to about 165°F (74°C). Add the pale malt, crystal malt, and carapils malt. Stir well to ensure the grains are fully submerged. Hold the temperature at 152°F (67°C) for 60 minutes.

Mashing the Grains

After mashing, drain the wort from the mash tun into a kettle. Rinse the grains with hot water (approximately 170°F or 77°C) to extract more sugars, collecting about 6.5 gallons of wort.

Sparging

Bring the wort to a boil. Once boiling, add the Chinook hops and boil for 60 minutes. After 30 minutes, add the Citra hops. This will contribute to the bitterness of the beer.

Boiling the Wort

In the last 5 minutes of the boil, add the Simcoe hops. This will enhance the aroma and flavor of the beer.

Finishing Hops

After the boil, quickly cool the wort to about 70°F (21°C) using a wort chiller or an ice bath.

Cooling the Wort

Transfer the cooled wort to a sanitized fermenter. Sprinkle the American Ale yeast on top of the wort. Seal the fermenter with an airlock.

Pitching the Yeast

Allow the beer to ferment for about 1-2 weeks at room temperature, or until fermentation is complete (specific gravity stabilizes).

Fermentation Period

Once fermentation is complete, bottle the beer with priming sugar to carbonate. Store the bottles at room temperature for another 1-2 weeks to carbonate.
