Prepare Glass

Rim the glass

Run the lime wedge around the outer rim of a rocks or coupe glass (or preferred glass). On a small plate, mix Tajín and kosher salt (if using) and press the wet rim into the seasoning to coat evenly. Set glass aside.

Build Cocktail

Fill a cocktail shaker halfway with ice (about 1 cup).

Add 2 oz Lalo Blanco tequila, 3 oz fresh pineapple juice, 1 oz unsweetened coconut water, 0.5 oz fresh lime juice and 0.5 tbs agave syrup to the shaker.

Secure the shaker lid and shake vigorously for 12–15 seconds until the outside of the shaker is cold and slightly frosted. This chills and slightly dilutes the drink for balance.

Fill the prepared glass with fresh ice if desired (or serve neat in chilled glass). Strain the shaken cocktail into the glass using a Hawthorne strainer or the shaker lid, pouring over ice or straight up per preference.

Garnish & Serve

Garnish with a pineapple wedge on the rim and a lime wedge. If you like, skewer the pineapple with a toothpick and rest across the glass rim.

Serve immediately and enjoy. Adjust sweetness with additional agave (1/4 tbs increments) or tartness with additional lime (1/4 oz) to taste.
