Fit Turkey Wrap

Choose either the house red or the house white based on guest preference. Ensure the bottle for the chosen wine is the correct house label and in good condition (no off odors, no leaking).

Selecting the wine

Confirm serving temperature: house red should be served slightly below room temperature, about 15–18°C (59–64°F); house white should be chilled to about 7–10°C (45–50°F). If the wine is out of range, chill or let it sit briefly to reach the appropriate temperature.

Temperature check

Wipe the bottle neck with a clean towel. Use a wine key to cut and remove the foil just below the lip. Wipe again. Insert the corkscrew into the center of the cork and twist in until one spiral turn remains. Pull the cork out steadily with the lever. Wipe the bottle mouth to remove any cork debris.

If the bottle has a screwcap, wipe the lip of the bottle and twist the cap off cleanly. Wipe the rim before pouring.

Select the appropriate glass: a Bordeaux-style glass for red, tulip or smaller-bowled white glass for white. Hold the bottle by the base or lower body. If using a pourer, insert it snugly. Pour about 5 oz (150 ml) for a standard wine-by-the-glass serving. Aim to fill the glass to approximately one-third to allow room for aroma. Make a small twist at the end of the pour to prevent drips. Wipe any drips with the towel.

Pouring

Present the glass to the guest with the label facing them (if opened from a bottle) or simply in a polite manner. Place the bottle on the table or nearby if the guest may want more, or remove it according to house policy. If the guest requests a taste, offer a small taste (1 oz / 30 ml) for approval before pouring the full 5 oz.

Presentation

If serving multiple glasses from the same bottle, keep the white bottle in an ice bucket or chilled, and keep the red bottle at cool room temperature or in a wine cooler if necessary. Recork or reseal opened bottles and store upright or in a wine fridge per house protocol.

Temperature maintenance

Inspect the selected glass for cleanliness and absence of spots or chips. Use the appropriate glass for the wine style.

Have a clean towel or napkin on hand to wipe the bottle neck and catch drips during pouring.

If a guest requests a taste, pour a small sample (about 30 ml) into their glass first. After approval, pour the full serving (about 150 ml) following the pouring instructions above.
