Housemade Grapefruit Soda (make first)

Make grapefruit simple syrup

In a heatproof container, combine granulated sugar and hot water. Stir until the sugar is fully dissolved to make a syrup base (about 30–60 seconds).

Add grapefruit and lime

Stir in 1 cup fresh grapefruit juice, 1 tablespoon fresh lime juice, and optional grapefruit zest into the warm syrup. Let the mixture cool to room temperature (about 10–15 minutes).

Carbonate

Once cooled, strain the mixture through a fine mesh sieve to remove pulp and zest. Combine the strained grapefruit syrup with 1 cup carbonated water (club soda) and gently stir to preserve fizz. Chill until ready to use. Yield: ~2 cups grapefruit soda.

Paloma (single serving)

Prepare glass

Rub a grapefruit or lime wedge around the rim of a highball or Collins glass. Dip the rim into kosher salt to lightly coat it. Fill the glass about 3/4 full with cubed ice.

Build the cocktail

In a mixing glass or shaker without shaking, combine 2 oz Monte Alban Reposado tequila, 2 oz fresh grapefruit juice, 0.5 oz fresh lime juice, and 0.5 oz simple syrup (or agave). Add a few ice cubes and stir gently for 10–15 seconds to chill and dilute slightly.

Top with grapefruit soda

Strain the stirred mixture into the prepared glass over fresh ice. Top with 3 oz housemade grapefruit soda (adjust to taste). Give a gentle stir once to integrate.

Garnish and finish

Garnish with a grapefruit wedge or wheel on the rim. Serve immediately with a straw or stirring stick.
