Watermelon Base
Prepare and purée
Place the 4 cups cubed seedless watermelon into a blender. Add 1/2 cup fresh lime juice, 3 tablespoons granulated sugar, and 1/2 cup cold water. Purée on high until completely smooth, about 30–45 seconds.
Strain the puréed watermelon through a fine-mesh sieve into a bowl or pitcher, pressing with a spatula to extract as much liquid as possible. Discard solids. Taste the strained juice and adjust sweetness: add up to 1 tablespoon more sugar if needed and stir until dissolved.
Chill the watermelon base in the refrigerator for at least 10 minutes if not serving immediately. This also helps keep the final drink crisp and cold.

Assemble the cooler
Fill four tall glasses evenly with ice cubes (about 1 cup ice per glass). Divide the chilled watermelon base evenly among the four glasses (about 1/2 cup per glass).
Top each glass with 1/2 cup club soda or sparkling water, pouring gently to preserve carbonation. Give each glass one gentle stir to combine.
Bruise mint leaves by clapping them between your palms or gently crushing with the back of a spoon to release aroma. Tuck 3 crushed mint leaves into each glass and garnish with a lime wheel or wedge.
Serve immediately. Stir briefly before sipping to redistribute any settled solids. Optionally provide extra lime wedges and mint on the side.
