Chill bottles and glasses

Place the prosecco and Aperol in the refrigerator until well chilled (several hours or overnight). If short on time, chill in an ice bucket for 20–30 minutes. Chill glasses in the fridge or by filling with ice and cold water for 5 minutes, then discard the water and ice before serving.

Slice oranges

Wash two medium oranges. Cut into wheels or half-moons about 1/4-inch thick. Reserve 4 attractive slices for garnish and the remainder for guests to add more if desired.

Build the Spritzes (makes 3–4 servings)

Prepare glasses

Fill each wine glass about halfway with ice (or to preference). Place one orange slice in each glass to rest against the inside of the glass.

Pour Aperol

Measure and pour Aperol into the glasses: use the classic ratio of 3 parts prosecco : 2 parts Aperol : 1 part sparkling water. For 3–4 drinks from one bottle of prosecco and 350 ml Aperol, pour roughly 60–75 ml (about 2–2.5 fl oz) Aperol per glass. Divide the 350 ml Aperol across 4 glasses (approximately 87.5 ml each) if you prefer slightly stronger Aperol; for a lighter spritz, divide across 3 glasses. Pour the Aperol over the ice in each glass.

Add prosecco

Gently pour chilled prosecco into each glass slowly to preserve bubbles — about 90–120 ml per glass, following the 3:2 ratio. Tilt the glass slightly and pour down the side to reduce foam. Stop when glass is about three-quarters full.

Top with sparkling water

Finish each spritz with a splash of chilled sparkling water (about 30–45 ml per glass). Adjust to taste for fizz and dilution.

Stir gently

Give each glass one gentle stir with a bar spoon or straw to combine layers without losing carbonation or over-diluting.

Garnish and arrange

Garnish each glass with an orange wheel on the rim or floated in the drink. Place the prepared glasses on a serving tray along with the remaining orange slices, extra ice, the bottle of prosecco and Aperol (open or unopened), and the chilled sparkling water so guests can top up if desired.

Serve immediately while cold and fizzy. Offer extra orange slices, spare ice, and a small pitcher of sparkling water for guests who want to adjust strength or dilution. If preparing ahead, do not combine prosecco and sparkling water until serving to preserve effervescence.

Estimated alcohol guidance: one bottle of prosecco plus 350 ml Aperol yields roughly 3–4 standard Aperol Spritzes. Adjust Aperol quantity or add more prosecco/sparkling water for additional guests.
