Prepare Glass

Rim the glass

Rub a lime wedge around the rim of a highball or Collins glass. Dip the rim into a shallow plate of kosher salt (optionally mixed with a pinch of smoked salt or crushed candied bacon) to coat evenly. Set the glass aside.

Fill the rimmed glass with ice to chill while you mix the cocktail.

Mix Cocktail

Add the spirit of choice (2 oz) into a cocktail shaker or mixing glass.

Pour in 4 oz Clamato juice and 0.5 oz freshly squeezed lime juice.

Add 0.5 tablespoon Worcestershire sauce, 3 dashes hot sauce, and 3 dashes Cascade Celery bitters.

Add a twist of freshly ground black pepper.

Fill the shaker or mixing glass with ice (about 1 cup) and stir for 10–15 seconds until well chilled and slightly diluted. If you prefer a slightly frothier texture, give a very brief hard shake (1–2 seconds) but beware of cloudy result.

Finish & Garnish

Discard ice from the chilled serving glass and strain the mixed cocktail into the glass over fresh ice.

Garnish with a celery stalk and a lime wedge on the rim. Optionally wedge a piece of candied bacon on the rim or sprinkle a light pinch of smoked salt over the drink.

Give the drink one gentle stir to integrate garnish flavors and serve immediately.
