Slow-Roasted Marinated Peppers

Roast the peppers

Preheat oven to 400°F (200°C). Place whole peppers on a rimmed baking sheet lined with foil. Roast until skins are blistered and browned on all sides, about 25–35 minutes, turning once or twice so they char evenly.

Steam and peel

Transfer hot peppers to a heatproof bowl and cover tightly with plastic wrap or place in a sealed zip-top bag for 10–15 minutes to steam. Once cooled enough to handle, peel off the skins, remove stems, seeds, and membranes. Slice peppers into 1/2" wide strips and place in a bowl.

Marinate

While still warm, add smashed garlic clove, 2 tbs extra-virgin olive oil, 1 tsp red wine vinegar, 1/2 tsp dried oregano, 1/2 tsp fine sea salt, 1/4 tsp black pepper, and 1 tbsp chopped parsley to the pepper strips. Toss gently to coat. Taste and adjust salt or vinegar slightly if needed. Let peppers cool and marinate for at least 30 minutes (can be made ahead and refrigerated up to 48 hours).

Whip ricotta

In a food processor or blender, combine 1 cup whole-milk ricotta, 2 tbs softened cream cheese, 1 tbs extra-virgin olive oil, 1 tsp fresh lemon juice, 1/2 tsp minced garlic, 1/2 tsp fine sea salt, and 1/4 tsp black pepper. Process until very smooth and airy, about 30–60 seconds. Scrape down sides and pulse again if needed. Stir in chiffonaded basil if using. Adjust seasoning to taste.

Chill briefly

Transfer whipped ricotta to a bowl and chill for 10–15 minutes if time allows; this firms it slightly and helps with spreading on the toasts.

Toasts & Assembly

Prepare toasts

Preheat broiler or set oven to 450°F (230°C) with a rack in the top third. Arrange 6 baguette slices on a baking sheet. Brush each slice lightly with 1 tbs olive oil total (approx. brush each side). Toast under the broiler or in the oven until edges are golden and crisp, about 1–3 minutes per side under broiler or 6–8 minutes in oven, watching carefully to avoid burning.

Assemble bruschetta

Spread a generous tablespoon (or a small quenelle) of whipped ricotta onto each toast. Top each piece with 2–3 strips of marinated roasted pepper, arranging for visual appeal.

Finish and serve

Drizzle a small amount of the pepper marinade or 1/2 tsp extra-virgin olive oil over each bruschetta. Sprinkle with flaky sea salt (a pinch each), a little lemon zest if using, and a few microgreens or basil leaves. Serve immediately. Makes three double-sided pieces or six single toasts; intended portion: three pieces (two toasts each) as described.
