Make passion fruit-rosemary syrup (if you don't have it)

Combine 1/2 cup sugar, 1/2 cup water, 1/4 cup passion fruit puree (or 2 passion fruits pulp), and 1 medium rosemary sprig in a small saucepan. Bring to a gentle simmer over medium heat, stirring until sugar dissolves. Simmer 2 minutes to infuse rosemary, then remove from heat and cool to room temperature. Remove rosemary and strain out seeds if desired. Refrigerate until chilled. Makes about 3/4 cup.

Fill a cocktail shaker halfway with ice.

Add 2 oz Dillon's Selby Berry Bliss gin to the shaker.

Pour in 0.75 oz fresh lemon juice.

Add 0.5 oz passion fruit-rosemary syrup.

Cap the shaker and shake vigorously for 10–12 seconds to chill and dilute slightly.

Fill a chilled Collins or highball glass with fresh ice (about 3/4 full).

Strain the shaken mixture into the prepared glass.

Top with 2 oz chilled sparkling water or sparkling wine; stir gently once to combine.

Garnish with a lemon wheel on the rim and a sprig of rosemary. Clap the rosemary between your palms first to release aromatics, then tuck it into the glass.
