Prepare glass

Choose a copper mule mug or a highball glass and chill it briefly in the freezer (5–10 minutes) or fill it with ice to cool while you prepare the cocktail.

Combine base ingredients

In a cocktail shaker, add 2 oz vodka, 3 oz fresh pineapple juice, 0.5 oz fresh lime juice and 0.5 oz pineapple syrup if using. Fill the shaker halfway with ice.

Quick shake

Shake vigorously for about 8–10 seconds until the outside of the shaker is cold. This slightly thins the pineapple juice and chills the mixture.

Assemble

Discard the cooling ice from the glass if you chilled it that way. Fill the glass with fresh crushed ice (about 1 cup). Strain the shaken mixture over the crushed ice.

Top with ginger beer

Carefully top the drink with 4 oz (about half a can) of chilled Fever-Tree ginger beer. Gently stir once with a bar spoon to combine without flattening the fizz.

Garnish & Serve

Garnish the drink with a lime wheel or wedge on the rim, a pineapple wedge or small pineapple leaf, and a sprig of fresh mint if desired. Serve immediately with a straw or short stirrer.
