Chill the Champagne bottle: place the bottle in an ice bucket filled with equal parts ice and cold water for 20–30 minutes, or refrigerate upright for at least 3 hours. If using ice only, surround bottle fully so it cools evenly.

When ready to serve, remove bottle from ice bucket and dry the neck. Hold the bottle at a 45° angle and gently remove foil and wire cage from the cork while keeping one thumb over the cork.

Grip the cork and rotate the bottle (not the cork) slowly to ease the cork out with a quiet pop. Pour into chilled flutes, filling each about two-thirds to allow the aromas to develop.

Mignonette Sauce

Make mignonette

Combine the red wine vinegar and minced shallot in a small bowl. Stir in the freshly ground black pepper and optional sugar. Taste and adjust balance—add a pinch more sugar if too sharp. Refrigerate until service (can be made up to 1 day ahead).

Oysters & Plating

Prepare a stable serving bed: spread crushed ice or a layer of rock salt in a shallow serving platter or bowl to cradle oysters and keep them level.

Rinse the oysters under cold running water and use a brush to remove surface grit. Discard any shells that are cracked or that do not close when tapped (they may be dead).

Using a thick towel or glove to protect your hand, hold an oyster cupped-side down and insert the tip of an oyster knife into the hinge. Twist the knife to pop the hinge open. Slide the knife along the top shell to cut the muscle and remove the top shell, being careful to preserve the liquor (the briny liquid) in the bottom shell.

Run the knife under the oyster to detach the bottom muscle so the oyster sits loose in its shell, keeping as much liquor as possible. Place the opened oyster on the prepared bed.

Repeat shucking for all oysters and arrange them attractively on the ice bed. Keep the platter chilled and cover with plastic briefly if there’s any wait.

To serve: provide small spoons or tongs for the mignonette, lemon wedges, and hot sauce. For each oyster, guests may add a small spoonful of mignonette, a squeeze of lemon, a dash of hot sauce, and a grind of black pepper according to taste. Instruct guests to tip the shell and slurp the oyster with its liquor, then follow with a sip of chilled Champagne.

Serve oysters immediately after shucking to preserve freshness and temperature. Aim to finish shucking within 15–25 minutes for one dozen so they remain cold and safe.
