Semifreddo base
Prepare eggs and sugar
Place 4 large eggs in a heatproof bowl along with 100 g granulated sugar. Whisk to combine briefly.
Remove from heat and continue whisking until the mixture cools to warm (about 5 minutes). Then whisk in 1 tsp vanilla extract and a pinch of fine sea salt.
Using an electric mixer, whip the warmed egg-sugar mixture on high speed until it is light, tripled slightly in volume and forms a thick ribbon when the beaters are lifted, about 5–7 minutes. Set aside.
In a separate chilled bowl, whip 400 ml cold heavy cream to soft peaks. Be careful not to overwhip; you want a stable but pillowy cream.
Fold one-quarter of the whipped cream into the whipped egg mixture to lighten it, using a rubber spatula. Then fold in the remaining cream gently until no streaks remain.
Slowly drizzle 80 ml extra-virgin olive oil into the semifreddo mixture in a thin stream while folding gently. This ensures a smooth emulsion; do not add all at once. Fold until uniformly incorporated and the mixture is smooth and slightly glossy.
White chocolate & citrus swirl
Place 150 g chopped white chocolate in a heatproof bowl. Warm 60 ml heavy cream until just simmering and pour over the chocolate. Let sit 1 minute, then stir until smooth to make a ganache. If needed, microwave in 10-second bursts, stirring between, until fully melted and smooth.
Stir 1 tbs lemon zest, 1 tbs orange zest and 1 tbs fresh lemon juice into the white chocolate ganache. Allow ganache to cool to room temperature but remain pourable (about 10–15 minutes). If it firms too much, warm gently.
Reserve about 3–4 tablespoons of the ganache for swirling and additional garnish if desired.
Pistachio garnish & crunch
Preheat the oven to 160°C (320°F). Spread 80 g unshelled pistachios in a single layer on a baking sheet. Roast for 8–10 minutes until fragrant and lightly colored. Remove and let cool.
Once cooled, pulse the roasted pistachios in a food processor with 1 tbs powdered sugar until you have a coarse crumb — some larger pieces for crunch, but some fine powder to blend into the semifreddo base if desired. Reserve 30 g finely chopped pistachios separately for scattering on top.
Assembly & freeze
Fold two-thirds of the pistachio crumb into the semifreddo mixture to distribute nutty flavor and slight texture. Leave some crumb separate for a more pronounced crunch on top.
Spoon half of the white chocolate citrus ganache in dollops over the semifreddo. Using a skewer or knife, gently swirl the ganache into the semifreddo to create ribbons—do not overmix; you want visible veins of white chocolate and citrus.
Pour the remaining semifreddo mixture on top, smooth the surface, then spoon remaining ganache and create a final swirl. Sprinkle the reserved coarse pistachio crumb and the 30 g finely chopped pistachios evenly over the top.
Cover tightly with plastic wrap and freeze until firm, at least 6 hours or preferably overnight.
Finish & serve
Remove semifreddo from freezer 10–15 minutes before serving to soften slightly for easier slicing. Unmold by lifting the plastic wrap.
Slice with a warm, dry knife (dip in hot water and wipe between cuts for clean slices). Arrange slices on plates.
Drizzle each slice very lightly with 1 tsp high-quality extra-virgin olive oil and finish with a small pinch (about 1 tsp total distributed) of extra citrus zest. Optionally scatter additional chopped pistachios around the plate.
