Chill glass

If desired, chill an Old Fashioned glass or rocks glass by filling with ice and cold water while you prepare the cocktail; discard water before serving.

Build and stir

Add gin, Campari and sweet vermouth (and simple syrup only if using) to a mixing glass filled with plenty of ice. Stir briskly for 20–30 seconds (about 20–30 full strokes) until the mixture is well chilled and slightly diluted.

Strain

Discard ice/water from the chilled serving glass (if used). Strain the stirred cocktail into the glass over one large ice cube or fresh ice.

Garnish

Express the oils of the orange peel over the surface by holding it skin-side down and giving it a sharp twist, then rub the peel around the rim and drop it into the drink.

Serve immediately. Negroni is traditionally equal parts gin, Campari and sweet vermouth; adjust sweetness with a tiny bit of simple syrup only if necessary.
