Prep mushrooms

Clean mushrooms with a damp cloth; remove stems from portobello and slice portobello and cremini into roughly 1/4" slices so pieces are bite-sized for the shells.

Heat a large skillet over medium-high heat. Add 1 tbs olive oil and 1 tbs butter. Once butter foams, add the diced onion and sauté 4–5 minutes until translucent and starting to brown at the edges.

Add the minced garlic and sauté 30 seconds until fragrant, taking care not to burn it.

Add the sliced portobello and cremini mushrooms to the pan in an even layer. Cook without stirring for 2 minutes to allow browning, then stir and continue to sauté 4–5 more minutes until the mushrooms have released most of their moisture and are nicely browned.

Deglaze the pan with 1 tbs white wine (or vegetable stock), scraping up browned bits from the bottom. Stir in 1/2 tsp chopped thyme and 1/2 tsp soy sauce to boost umami.

Season with 1/2 tsp sea salt and 1/4 tsp black pepper. Continue cooking 1–2 minutes to concentrate flavors. Remove from heat and set aside while you make the truffle cream.

Truffle Cream Sauce

In a small saucepan over medium heat, melt 1 tbs unsalted butter until foaming.

Whisk in 1 tbs all-purpose flour and cook the roux, whisking constantly, for about 1 minute to remove raw flour taste but not brown it.

Gradually whisk in 3 tbs whole milk and 3 tbs heavy cream, starting with a splash to make a smooth paste, then adding the rest. Continue whisking until the sauce thickens and is smooth, about 2–3 minutes.

If the sauce seems too thick to coat the mushrooms, whisk in up to 1 tbs mushroom or vegetable stock to reach a spoonable consistency.

Remove the pan from heat and stir in 1/2 tsp black truffle oil and 1 tbs grated Parmesan (if using). Taste and season with 1/4 tsp salt and 1/8 tsp freshly ground black pepper. Adjust truffle oil carefully — it is potent.

Fold the warm mushroom mixture into the truffle cream sauce until evenly coated.

Assembly & Finish

Preheat oven to 325°F (160°C) if you want the vol-au-vent shells warmed/crisped. Place 4 shells on a baking sheet and warm for 4–6 minutes until just heated and rims are crisp. Alternatively, warm in a toaster oven.

Spoon the mushroom-truffle cream filling into each warmed vol-au-vent shell, dividing evenly (about 3–4 tbs filling per shell depending on size). Heap slightly so each looks generous.

Finish each filled shell with a light drizzle (about 1/8–1/4 tsp) of extra truffle oil, a sprinkle of microgreens or chopped parsley, and a pinch of lemon zest if using to brighten flavors.

Serve immediately while warm. These are designed as a 'pour deux' shareable snack — two people can enjoy two shells each.
