Prepare glass

Chill a large wine glass or a stemmed flute in the freezer for 5–10 minutes, or fill it with ice water while you prepare the cocktail.

Build base

In a cocktail shaker, add 1.5 oz Soho lychee liqueur, 0.5 oz fresh lemon juice, and 0.5 oz ginger syrup. Add a small handful of ice (about 1/2 cup) to the shaker.

Shake

Secure the shaker and shake vigorously for 8–10 seconds until the mixture is well chilled and slightly diluted.

Strain and top

Discard the chilling ice or water from your glass. Double-strain the shaken mixture into the chilled glass over fresh ice (about 1/2 cup). Immediately top with 3 oz Montelliana Spumante (or other dry sparkling wine). Pour slowly to preserve bubbles and gently stir once with a bar spoon to combine.

Add fruit

Drop the two halved lychees into the glass so they sit near the bottom and release a little flavor into the spritz.

Garnish & Serve

Garnish the rim with a lemon twist and tuck a fresh mint sprig alongside the lychees. Serve immediately with a small stirring spoon or straw.
