Preparation

Chill and setup

Place a serving platter or shallow bowl in the refrigerator. Fill the platter with crushed ice to create a stable cold bed for the oysters; this keeps oysters cold and presents them attractively.

Rinse the oyster shells under cold running water to remove grit. Scrub stubborn debris with a stiff brush. Keep oysters cold on ice or in the refrigerator until shucking.

Make the Classic Mignonette

In a small bowl combine red wine vinegar, finely minced shallot, freshly cracked black pepper, granulated sugar, and sea salt. Stir until sugar and salt dissolve. Taste and adjust balance—mignonette should be bright and slightly tart. Refrigerate until ready to serve.

Shucking the Oysters

Put on a thick kitchen towel or glove to protect your hand. Hold oyster with the hinge (pointed end) facing you. Insert the tip of the oyster knife into the hinge and twist gently until you feel the shell pop open.

Run the knife blade along the top shell to cut the adductor muscle, then remove and discard the top shell. Hold the oyster level and run the knife under the oyster to release it from the bottom shell, keeping the oyster liquor (the natural brine) in the shell.

Inspect each oyster for shell fragments; pick out any pieces with the tip of the knife. Place the oyster on the crushed-ice bed on the chilled platter, cup side down so the liquor is retained.

Finishing & Serving

Arrange the shucked oysters evenly on the bed of crushed ice. Place lemon wedges, cocktail sauce, prepared horseradish, and hot sauce in small bowls on the platter or on the side so guests can customize.

Spoon about 1/2 teaspoon of the mignonette onto each oyster, or allow guests to add to taste. Offer a small dollop of cocktail sauce or a pinch of horseradish and a dash of hot sauce as alternative condiments.

Garnish lightly with microgreens or a sprinkle of finely chopped chives and a touch of freshly cracked black pepper if desired. Serve immediately while oysters are cold and fresh.

Discard any oysters that do not smell cleanly briny (they should not smell overly fishy). Consume raw oysters promptly; do not leave at room temperature for more than 2 hours.
