Shuck and chill
Carefully shuck the oysters just before serving: hold oyster cup-side down on a towel, insert oyster knife at hinge, twist to pop, run knife along top shell to detach. Reserve oyster liquor in the shell. Place crushed ice in a shallow serving platter, nestle each half shell into the ice to level, and transfer oysters on shells to the ice bed. Keep refrigerated until plating if not serving immediately.
Arrange 6 oysters on the bed of crushed ice with lemon wedges on the side. Ensure each oyster retains its natural liquor.
Pineapple Mignonette
Make mignonette
Combine the finely minced fresh pineapple, red wine vinegar, minced shallot, sugar, a pinch of sea salt and a pinch of freshly ground black pepper in a small bowl. Stir well and let sit 5–10 minutes to allow the flavors to marry and the pineapple to release a little juice. Taste and adjust balance: add more vinegar for brightness, a touch more sugar to tame acidity, or an extra pinch of salt.
Spoon about 1 teaspoon of pineapple mignonette onto each oyster immediately before serving, taking care not to drown the oyster — you want a small bright garnish that complements the brine.
Jalapeño Hot Sauce
Prepare quick hot sauce
In a small bowl, mix the minced jalapeño with distilled white vinegar, honey and a pinch of salt. Stir thoroughly and let sit 2–3 minutes to soften the heat and marry flavors. Taste and adjust: add more honey to reduce heat or a few more drops of vinegar for tang.
Horseradish
Prepare horseradish
If using straight prepared horseradish, taste for heat. For a milder, creamier option, stir the prepared horseradish together with the creme fraiche or sour cream until smooth and slightly loose. This should yield approximately 1 teaspoon total per serving for gentle application.
Place a small smear (about 1/4 teaspoon) or a small quenelle on individual oysters as requested, or serve the horseradish mixture in a tiny dish alongside the oysters.
Plating & Service
Final assembly: for each oyster, optionally add a squeeze of lemon, then a small teaspoon of pineapple mignonette. Offer jalapeño hot sauce and horseradish on the side or dot sparingly on oysters per guest preference. Serve immediately so oysters remain chilled and fresh.
