Chill glass

Place a Champagne flute in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail; discard ice water before serving.

Combine and shake

Add gin, fresh lemon juice and simple syrup to a cocktail shaker. Fill the shaker with ice (about 6 medium cubes) so the liquid is well-chilled. Secure the lid and shake vigorously for 10–15 seconds until the outside of the shaker is very cold and slightly frosty.

Strain

Double-strain (using the shaker’s strainer and a fine mesh strainer if available) into the chilled Champagne flute to remove small ice shards and pulp. Fill the flute about two-thirds full to leave room for sparkling wine.

Top with sparkling wine

Slowly pour 3 oz chilled sparkling wine down the side of the flute so the drink preserves effervescence and avoids excessive foaming. Pour gently until the glass is nearly full.

Garnish and serve

Express a lemon twist over the drink by holding the peel over the glass and giving it a sharp twist to release oils; rub the rim with the peel and drop it into the flute. Serve immediately.
