Method

Coffee + Chocolate Sponge

Preheat and prepare pans

Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper; lightly flour the sides.

Combine dry ingredients

In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Whisk in the granulated sugar until evenly distributed.

Combine wet ingredients

In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.

Add coffee

Stir the hot brewed coffee and warm water into the wet mixture. The mixture will be hot — this helps bloom the cocoa and thin the batter for a moist crumb.

Make the batter

Pour the wet ingredients into the dry ingredients and gently fold with a rubber spatula or mixer on low speed until just combined and no large streaks of flour remain. Batter will be thin — that's normal.

Bake

Divide batter evenly between prepared pans. Bake on the middle rack for 28–33 minutes, or until a toothpick inserted in the centers comes out with a few moist crumbs but not wet batter.

Cool

Allow cakes to cool in the pans for 10 minutes, then run a knife around the edges, invert onto a cooling rack, remove parchment, and cool completely before icing (at least 1 hour).

Dark Chocolate Icing (for top and filling)

Melt chocolate

Place chopped bittersweet chocolate in a heatproof bowl. Heat heavy cream in a small saucepan until it just begins to simmer, then pour over the chocolate. Let sit 1 minute, then stir until smooth and glossy. Allow to cool slightly.

Cream butter and sugar

In a medium bowl, cream the softened butter until smooth. Gradually add the confectioners' sugar and cocoa powder, mixing on low to combine and avoid clouds of sugar.

Combine and finish icing

Pour the cooled melted chocolate into the butter-sugar mixture in thirds, mixing until smooth. Add vanilla and salt, then add additional heavy cream by teaspoonfuls if needed to reach spreadable consistency. Taste and adjust salt or sweetness if desired.

Chill if necessary

If the icing is too soft to spread, chill in the refrigerator for 10–15 minutes, stirring once, until it firms to a pipeable/spreadable texture.

White Chocolate Icing (for decoration)

Melt white chocolate

Place white chocolate in a heatproof bowl. Heat 2 tablespoons heavy cream until warm (not boiling) and pour over chocolate. Let sit 1 minute, stir until smooth. If needed, microwave in 10-second bursts stirring between until melted.

Combine with butter and sugar

In a small bowl, beat the softened butter until smooth. Gradually add confectioners' sugar, then beat in the melted white chocolate, cream, and vanilla until glossy and slightly thickened. If too stiff, add a teaspoon of cream; if too thin, add a little more powdered sugar.

Transfer for piping

Allow to cool to a spreadable/piping consistency. Transfer to a piping bag or small spatula-ready bowl for decorative touches.

Assembly & Chocolate Curls

Level and layer

If cake tops are domed, level each layer with a serrated knife to create flat surfaces. Place one cake layer on a serving plate or cake board.

Fill

Spread about two-thirds of the dark chocolate icing over the first layer (reserve remaining for top and sides). Place the second cake layer on top and press lightly to adhere.

Crumb coat

Apply a thin layer of the remaining dark chocolate icing around the top and sides to trap crumbs. Chill the cake in the refrigerator for 15–20 minutes to set the crumb coat.

Final coat and white decoration

Apply a final thicker coat of dark chocolate icing, smoothing the sides and top with an offset spatula. Use the white chocolate icing to pipe decorative accents, swirls, or dots around the top edge and center as desired.

Make chocolate curls

Warm the dark chocolate bar slightly (leave at room temperature or place briefly on a warm surface) until it is just soft enough to shave. Using a vegetable peeler or sharp knife at a shallow angle, shave along the edge to create curls. If chocolate cracks instead of curling, slightly warm the bar with your hands or microwave for 3–5 seconds and try again.

Garnish

Arrange chocolate curls on top of the cake where the white chocolate decoration sits. Dust very lightly with unsweetened cocoa powder if desired. Refrigerate for 10–15 minutes to set decorations, then bring to room temperature before serving for best texture.
