Method
Smoked Ribs
Prepare ribs
Preheat your smoker to 225°F (107°C). If you don't have a smoker, preheat an oven to 275°F (135°C) and prepare wood chips for a stovetop smoking pouch. Trim excess fat from the ribs and remove the membrane from the bone side: slide a knife under the membrane at one end, lift and grab with a paper towel, then pull it off.
Season
Pat ribs dry. Mix kosher salt, black pepper, garlic powder, and smoked paprika. Rub the vegetable oil evenly over both sides of the ribs, then massage the dry spice mix into both sides so they are lightly and evenly coated.
Smoke (low and slow)
Place ribs bone-side down on the smoker grates. Smoke at 225°F (107°C) for 3 hours, maintaining steady temperature and adding mild smoking wood (apple or cherry) as needed. If using an oven with a smoking pouch, roast at 275°F (135°C) for about 3 hours, checking for even cooking.
Wrap and tenderize (optional but recommended)
After 3 hours, remove ribs and place them on a large sheet of heavy-duty foil. Spoon about 2–3 tablespoons of the sticky ginger-soy sauce (reserve the rest) over the meat side, then tightly wrap the ribs in foil. Return to the smoker or oven and continue cooking for 1–1.5 hours at 225°F (107°C) (smoker) or 275°F (135°C) (oven) until meat is tender and pulls back from the bones slightly.
Rest
Carefully unwrap the foil and transfer ribs to a cutting board. Let them rest 10 minutes while you make the glaze and prepare to crisp the exterior.
Sticky Ginger-Soy Sauce
While the ribs cook in their final stage, combine soy sauce, dark brown sugar, grated ginger, minced garlic, rice vinegar, honey, hoisin, and sesame oil in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
Mix cornstarch with cold water in a small bowl to make a slurry. Slowly whisk the slurry into the simmering sauce and continue to cook for 1–2 minutes until sauce thickens to a glossy, pourable glaze. Remove from heat and keep warm. Reserve about 2–3 tablespoons before using in the wrap step (used earlier) and for glazing after crisping.
Finish & Crisp
Crisp: Place ribs bone-side down under the broiler or over direct high heat on the grill for 3–6 minutes, watching carefully so the sugars don't burn. Turn and brush again, crisping an additional 2–4 minutes until edges are caramelized and slightly charred in spots. If using a torch, you can carefully torch the glaze to achieve the same finish—work in short passes to avoid burning.
Slice & Serve: Transfer ribs to a board, cut into four pieces (or individual rib portions). Spoon any remaining warm glaze over the ribs, sprinkle with toasted sesame seeds and sliced scallions. Serve hot.
